They’ve got to be made fresh, blended fresh and bottled fresh. It also allows our winemaking team to work with incredibly fresh wines for the best possible non-alcoholic wines. Having our own spinning cone onsite means our Chief Winemaker, Duncan Shouler, has a much greater ability to experiment with the process and produce truly great alcohol-removed wine. The final result never has more than 0.5% alcohol – about the same level as what naturally occurs in fruit juice! This means we can keep as much of the beautiful, varietally expressive aromas as possible to recombine with the body of wine, while successfully removing the alcohol.
